A Big Change

Hi Everyone,

I’s been awhile since I last blogged here at SS, but it’s been an extremely difficult season in my life as of late with trials coming one after another! First, it was the transmission on our car,then our computer and now, sadly, I have been laid off from work as of last week.

It has been an extremely tough time for me and I am trying my best to stay positive and upbeat because I know we will get through this through prayer and perseverance. At first I was so upset because I was worrying more about the health insurance for the kids but after much prayer and talking with my Aunt, I have looked at all I have to be thankful for even at this difficult time:

*I get a severance, which is more than what some companies offer their employees during a layoff, Praise God!

*I can apply for unemployment and will have a few weeks to get my house in order from the move, which really needs it!!

*I will have more time to spend with the kids & family this summer

I know the Lord doesn’t close one door without opening another one as He has done in the past, and even though it seems like my entire world is falling apart, I know we will be ok, we will just have to stretch our dollars even further during this time:) (As if that will be a hard thing for me to do,lol)

As for SS, I really wish our computer at home was working (right now at sister’s using hers) and devote more time to growing it, but alas, I am limited at this time. So please bear with me, there are plenty of other fantastic blogs for you to get your deals from (Sonia, be sure to use them!!) here is just a few that I visit everyday:

Frugal Fun: Ice Cream In A Baggie

Here is a fun activity that you and your little ones will enjoy! Making your own ice cream! Yum!!

 You’ll be surprised at the good, “clean” fun you’ll enjoy when you make ice cream. This recipe is enough for one person to make 1 dish! So grab the kids, a handful of baggies and get to shaking!!

Ingredients:

1/2 cup milk
1/2 teaspoon vanilla
1 tablespoon sugar
4 cups crushed ice
4 tablespoons salt
2 quart size Zip-loc bags
1 gallon size Zip-loc freezer bag
a hand towel or gloves to keep fingers from freezing as well!

Directions:

Mix the milk, vanilla and sugar together in one of the quart size bags. Seal tightly, allowing as little air to remain in the bag as possible (too much air left inside may force the bag open during shaking)

 Place this bag inside the other quart size bag, again leaving as little air inside as possible and sealing well. By double-bagging, the risk of salt and ice leaking into the ice cream is minimized.

Put the two bags inside the gallon size bag and fill the bag with ice, then sprinkle salt on top. Again let all the air escape and seal the bag.

Wrap the bag in the towel or put your gloves on, and Shake, Shake, Shake! and massage the bag, making sure the ice surrounds the cream mixture.

Five to eight minutes is adequate time for the mixture to freeze into ice cream.

Tips:

Freezer bags work best because they are thicker and less likely to develop small holes, allowing the bags to leak. You can get away with using regular Zip-loc bags for the smaller quart sizes, because you are double-bagging. Especially if you plan to do this indoors, I strongly recommend using gallon size freezer bags.

Like many families, the schedule of our family changes drastically during the summer. My wife goes on hiatus from her job for a few months, our children are constantly at home, and I strive to rearrange my own work so that I can spend more time with them. Plus, the weather is beautiful, encouraging us to be outside.

Most summers, we load our summer scheduled down with all kinds of different activities – camping trips, visits to state parks, community festivals, and lots of other things.

But how do you find all of these things. Here are ten resources we use for finding great free/cheap things to do during the summer.

Community Festivals

Looking for city-wide festivals in your local community or in neighboring communities? Festivals.com is the best resource I’ve yet found for collecting listings of all of these festivals. While it doesn’t include everything, it does point out lots of interesting activities near your zip code all throughout the summer.

Music Festivals
http://www.festivalfinder.com/
Once you get beyond mega-festivals like Bonnaroo, there are a lot of music festivals all across the country, and many are surprisingly inexpensive (sometimes free). Such festivals are a great way to hear lots of interesting music and meet people who have similar interests.

National Parks
http://www.nps.gov/findapark/
A national parks pass can be one of the best frugal investments around. National parks are wonderful places to explore, camp, hike, and enjoy. The stunning beauty and majesty of nature found within many of the parks is well worth visiting.

State Parks

If you want a even less expensive and more local alternative to national parks, try finding a great state park near your area. State parks offer very inexpensive camping options and plenty of interesting area to explore and enjoy.

Libraries

Many libraries offer great summer programs of all kinds: reading groups, reading programs for kids, free film nights, and so on. Summertime is a great time to get in touch with the many interesting and free programs available right in your own town at the library.

Just add your city and state to the above Google query to find the community calendar for your own town. Community calendars are loaded with interesting and enjoyable free events, from community dinners to farmer’s markets in your local area. It’s also worth searching for the community calendars of cities and towns adjacent to where you life.

If you enjoy crafting, craft fairs can be incredibly fun ways to spend a day or two. Most craft fairs are free to enter and often provide a way to sell or trade your craft products, as well as pick up interesting and useful supplies and also learn new techniques.

Summertime is the perfect time to start a natural collection of your own. Minor League Baseball

Minor league baseball games are pure fun – much more frugal and much more laid back than major league games, often with wacky entertainment to boot. Let’s Eat Outside – Great Kid-Friendly Picnic Ideas

Summer is almost here and with the kids home all day this is the perfect time for a picnic. Pack up some food, cool drinks and a blanket and head for the park, playground or even just the backyard. You can even entertain your little ones with a picnic on the kitchen or living room floor on a rainy day.

Of course you could just fix some PB&J sandwiches, pack a couple of juice boxes and call it a picnic, but there are so many other fun and delicious things you could prepare. Here are a few ideas to get your creative juices flowing.

A New Twist for PB&J
Pack a few rice cakes, a small jar of peanut butter, some raisins and other dried fruit as well as some apples. When it’s time to eat, spread peanut butter on the rice cake and let your child decorate it with the dried and fresh fruit. Raisins become eyes, a slice of apple the mouth and a berry makes a great nose.

Crackers and Cheese
Buy some hard cheese, such as cheddar, slice it (or buy it pre-sliced from the deli), and cut shapes out with small cookie cutters. You can also use cookie cutters on thicker slices of ham, salami or bologna. Serve with an assortment of crackers, and fresh fruit, such as grapes or berries.

Deli Style Sandwiches
Get some sub rolls, a little mayo and mustard (the small packs you get at fast food places work great for a picnic), and a variety of deli style sandwich meat and cheeses. Top it all off with a few leaves of lettuce that you washed at home and brought in a plastic baggie. Let each family member create their own sub with their favorite meats and cheeses. A bag of chips completes the meal.

“Fried Chicken Strips” With Veggies n’ Dip
Use some crushed cornflakes to bread chicken breast strips and bake them in the oven until done. You can do this the night before the picnic and refrigerate the chicken strips – they are delicious cold. Cut up some veggies like peppers, celery, cucumber, broccoli and cauliflower and add some baby carrots. Bring a little ranch dressing to use as a dip and your picnic is complete.

Desserts
Fresh fruit of course always makes for a great portable dessert on a picnic. Some homemade or store-bought cookies are another great option. Bake a batch of brownies, cut them and bag them after they have cooled completely for a chocolaty treat.

Grab a cooler, fix some sandwiches and head out to the park, playground or even the backyard for a picnic. Don’t forget lots of water on warm days!
