Erin from $5 Dinners says, “A perfect fall dish that is guaranteed to warm your tummy and satisfy your taste buds!”

Ingredients
1 1/2 cups shredded chicken
10 oz box or bag of frozen corn kernals
1 cup frozen lima beans
2 T butter
1/2 onion, chopped
1 tomato
1 cup heavy cream (I used 2%!)
Salt and Pepper
1 cup brown rice/basmati

Directions
1. Cook 1 cup brown rice in 2 cups water. Bring water to boil, add rice, and return to boil. Cover, reduce heat and simmer 50 minutes. (House will smell like popcorn!)
2. Saute and then shred 1-2 chicken breasts.
3. In large skill, melt 2 T butter, add chopped onions and saute. Once onions are clear, add corn, lima beans and cream/milk. Cook until corn and lima beans have thawed. Then add shredded chicken and simmer until sauce thickens. Add tomatoes just before serving.
4. Serve chicken succotash over brown rice.
