Sweet Cinnamon Cornmeal Sticks

I love the Fall weather because its so close to the holidays and that’s when true baking begins!! I especially love the aroma of cinnamon wafting throughout the house! One of our favorite morning recipes to make during the cold months are these cornmeal sticks which are absolutely delicious! My kids LOVE them and they are easy & inexpensive to make!
The recipe was adapted from a Puerto Rican breakfast item called Surullos, but I changed it up a bit to fit my family’s tastes! We usually eat these about twice a weak served with a small ramekin of syrup which we dip thye sticks into in. They make a great afternoon snack too! I hope you enjoy them:)
Ingredients:
- 1 cup pre cooked cornmeal
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 tablespoons white sugar
- 3/4 cup boiling water
- 1 tablespoon shortening
Directions:
- Combine the cornmeal, salt, cinnamon and sugar. Mix together well.
- Combine the shortening with the boiling water until melted, then add to the cornmeal mixture.
- Mix well! The mixture will be thick, you will need to make sure to get all the cornmeal coated and mixed.
- Shape the cornmeal mixture into sticks as fat as mozzarella sticks. Be sure to make them uniform in size!
- Fry the sticks in oil; for a few minutes on each side, just until slightly crispy but not too dark. Remember, the cornmeal is already pre cooked so this step is just to get them lightly toasty.
Voila! You now have some tasty, sweet cornmeal sticks that are nice and tender on the inside while toasty on the outside. Dip into pancake syrup or honey or as my one daughter likes to do , dip into your favorite jam or jelly!
